The simplest....Roasted Corn Salsa

I should not be typing this at dinner time. It is making my mouth drool... but I'll fight through it for ya :)
This salsa is so easy! and delicious! and versatile! I love it on its own with tortilla chips, in a salad..... Still have some of that maple chipotle chicken in your fridge? Stay tuned for a lunch idea combining that chicken and this salsa!
This salsa is a simple recipe that you can prep on the weekend and then enjoy for a healthy snack or add to a dinner dish throughout the week. It is full of veggies and the beans add some time protein. Chop, spread on baking sheet, and bake. easy peasy. yayyy.

Roasted Corn Salsa
1 cup red onion, diced (about 1/2 a large)
1 cup red bell pepper, diced (1 large bell pepper)
1 (16oz) can black beans, drained
1 can yellow corn, drained
1/2 lime, juiced
salt
pepper
garlic powder
Preheat oven to 400.
Chop onion and pepper and dump into a large mixing bowl. Add drained corn and beans.
Pour over lime juice and add seasonings to your taste... about 1/2 -1 teaspoon of eat should do. Combine it all.
Spray a large rimmed baking sheet with cooking spray. Spread ingredients evenly on baking sheet. Give it a nice spray down.
Place in oven for about 30 minutes, stopping halfway to stir.
Enjoy warm or place in tupperware container and enjoy cold! (even better after a day)
